Chef Eric Frechon leaves the Bristol Paris

Chef Eric Frechon and the Bristol Paris are ending their collaboration. This announcement marks the end of a 25-year adventure at the famous Parisian palace, which is preparing to celebrate its centenary.

Le Bristol announced on February 27 that it is losing 60-year-old Eric Frechon, its Meilleur Ouvrier de France chef and three-time Michelin-starred chef.

 

For this ambassador of world gastronomy, who worked for 25 years at the famous luxury hotel, the decision was motivated by a desire to “explore new fields of expression” and devote himself to the development of his group and the establishments he accompanies.

The chef also spoke of his desire to strike a better balance between his professional and personal life. His departure will take effect on April 15. The name of his successor at the helm of Epicure, the hotel’s gourmet restaurant, has yet to be announced.

 

Doyen of palace kitchens

At the helm of the Bristol Paris kitchens since 1999, Eric Frechon remains the only Michelin-starred chef to have spent so many years in the service of a luxury hotel.

Thanks to this native of Normandy and former second-in-command to Christian Constant at the Crillon, Epicure, the gastronomic table of this emblematic establishment on the rue du Faubourg Saint Honoré, was awarded three Michelin stars in 2009. Under his guidance, 114 Faubourg, the hotel’s bistronomic restaurant, was awarded a star in 2013.
