“(F)EAT by Hennessy v.s.”, the ephemeral restaurant that combines street food and mixology

Until tomorrow (Tuesday), foodies and the whole fashion sphere will be able to discover this new place entirely imagined by the Hennessy cognac house, and to taste an exclusive made-to-measure menu elaborated by the very famous Chef Xavier Pincemin.

 

In the heart of the 9th arrondissement, rue du Faubourg Montmartre, this chic and urban restaurant offers a real festival on the plate – with masterful and surprising culinary combinations – but also in the glasses – via surprising ingredients mixed with Hennessy V.S cognac.

 

A collaboration between chef Xavier Pincemin and bartender Yonni André Bella Ola

 

The DNA of this new place, spread over two floors, is the crossroads of all the influences shared by the House of Hennessy, the chef Xavier Pincemin and the bartender Yonni André Bella Ola.

 

 

On the one hand, a bar allows you to taste original cocktails, created in the art of mixology, by VICE’s favourite bartender. On the other, a restaurant offers an exclusive food-pairing menu, directed by Xavier Pincemin.

 

Xavier Pincemin is one of the most renowned chefs of his generation. Since his victory in the Top Chef 2016 season, he has proven himself and asserted his culinary personality, on the borders of street food and gastronomy. He is now at the head of two restaurants: Le Pincemin and Lafayette in Versailles.

 

The restaurant, by reservation only, allows you to explore the chef’s creations through a tailor-made food-pairing menu. An original menu, in keeping with the singular spirit of the House of Hennessy, offers a tapas and finger food style of cooking, mixing vegetarian and meat dishes. Each dish can be paired with its own cognac-based cocktail.

 

 

The centrepiece of the menu is a medallion of Breton blue lobster, accompanied by a piece of French beef roasted in cognac butter. Another delicacy: baos filled with lobster claw ceviche and shredded beef.  In short, an urban gastronomy that juggles land and sea.

 

A space in the basement allows you to extend the evening and enjoy a final cocktail based on Hennessy V.S.
