The Parisian palace has decided to create two separate positions to replace pastry chef François Perret, who left at the end of August. Olivier Lainé becomes the new pastry chef for the Ritz Paris restaurant, and Joris Theysset takes over at its gourmet annex, Ritz Paris le Comptoir.
On November 20, the Ritz Paris finally found not one but two successors to pastry chef François Perret. Perret, who left at the end of August, had been in charge of the Ritz Paris’s dessert menu for ten years and had overseen the launch of the Ritz Paris le Comptoir boutique-pastry shop-tea room concept in 2021. Two months before his departure, he had inaugurated the second location of this gourmet annex to the Place Vendôme hotel on Rue de Sèvres.
To ensure continuity, the famous palace chose to promote two internal talents, well-acquainted with the culture of the Ritz Paris: Olivier Lainé to head up pastry creations for its restaurants (the gourmet restaurant Espadon alongside Eugénie Béziat, as well as Bar Vendôme, tea time, and breakfast) and Joris Theysset to an equivalent position but for Ritz Paris le Comptoir.

To ensure the quality of its dessert menu, the Ritz Paris has set its sights on the pastry chef at the École Ritz Escoffier, a position he has held for seven years.

His appointment was an obvious choice. We are convinced that he will continue to promote the Ritz Paris’s pastry shop throughout the world, driven by his talent and unparalleled technical skills.” A teacher, the newcomer has “trained many professionals, generously sharing his expertise that transcends borders.”
