Saint Tropez: White 2021, the Hôtel Restaurant de Louis Vuitton welcomes Arnaud Donckele and Maxime Frédéric.

Michelin-starred chef Arnaud Donckele and pastry prodigy Maxime Frédéric have been commissioned to design the new menu for the White 2021 hotel restaurant. The restaurant was opened in Saint Tropez by Lvmh in 2013, before becoming a Louis Vuitton signature last year.

Maintaining a high level of desirability by renewing creative talent.

 

A recipe that Lvmh and Louis Vuitton are applying in fashion… but also in the restaurant business.

 

In 2022, Louis Vuitton gave its signature to White 1921. This elegant hotel had been opened ten years earlier by its parent company, the Lvmh group, in Saint Tropez, on the famous Place des Lices. A relatively confidential location with seven rooms and suites in the heart of the famous fishing port that has become ‘the place to be seen’ in summer.

 

A star duo for the famous trunk-maker

 

Today, the famous trunk-maker announced the arrival of a star duo to head up the White 1921 restaurant: Michelin-starred chef Arnaud Donckele and pastry chef Maxime Frédéric. Both from Normandy, the cradle of good food, “professional accomplices and friends in life”, “the two men also share” “a vision of gastronomy that is tasty, clear and authentic” says Lvmh.

 

Aged 46, Arnaud Donckele is chef at the restaurants La Vague d’Or in Saint Tropez and Plénitude in Paris, both of which have three Michelin stars.

Thirtysomething Maxime Frédéric, voted best pastry chef in 2022 by the Gault & Millau guide, was already working with Lvmh. The world leader in luxury goods entrusted the young prodigy with the sweet menu at its Cheval Blanc hotel in Paris, next to the Samaritaine. And Louis Vuitton had already called on him at the end of 2022 to set up a Café and Chocolaterie within its LV Dream. Open on rue de la mégisserie, the latter will devote a vast exhibition and gift shop to the House’s collaborations until the end of 2023.

 

Jean Imbert, Diego Alary and…Pharell Williams

 

Before the arrival of this new duo with their brilliant pedigree, the White 1921 restaurant had already made a name for itself by calling on high-profile personalities In 2020, Lvmh called on French chef Jean Imbert, winner of the ‘Top Chef’ show in 2012, and American artist Pharell Williams to give it visibility. The two partners, who were already behind the Swan restaurant in Miami in 2018, then set up a new concept in Saint Tropez called “To Share”.

 

Pharrell Williams (who became artistic director of Louis Vuitton Homme on 14 February this year) lent a hand, sharing his vision to redecorate the place and turn it into a cool, designer spot. Diego Alary, himself a former Top Chef contestant in 2020, has been appointed executive chef of the establishment. Also a videographer on the Tik Tok social network, he has become the world’s most followed chef with 2.9 million subscribers.

 

A year with Mory Sacko

 

In 2022, now a Louis Vuitton address, the White 2021 restaurant turned to another former Top Chef contestant in 2020, chef Mory Sacko. Sacko opened his own Parisian restaurant, MoSuke, at the end of 2020, earning a Michelin star in the process.

 

A year later, Louis Vuitton is repeating the exercise with the Arnaud Donckele-Maxime Frédéric tandem.

 

Committed to “sourcing high quality products from local producers according to the season” and “defending the craftsmanship of exceptional materials, which echoes the great tradition of Louis Vuitton” says Lvmh, they are playing the “mix between the best of the terroir and Mediterranean influences”…

 

To build their menu, the two partners have put “the whole region in the spotlight” by bringing together its best products: rice from the Camargue, fish from local, artisanal and eco-responsible fishing, vegetables grown by Provençal market gardeners…

 

A sweet start

 

This “four-handed summer proposal” kicks off at 3pm with “a few sweet notes”: chocolate bars and Tropezian tart for the most indulgent, and sorbets or Dolce Vita cups for those with a sweet tooth.

Once you’ve washed away (a few) calories in the deep blue sea, the gourmet journey continues at dinner.

 

New menu, new decor

 

In the evening, White 1921 offers “an exploration of the pure tastes and sun-drenched textures of the Mediterranean basin” via a “refined menu”: “truffle-filled Italian pasta, prawn tartare and lamb chop infused with Moroccan spices”.

But it’s not just the menu that’s changing at White 1921. It also boasts a new décor, “inspired by the world of Louis Vuitton”, i.e. “the blue and white check pattern unveiled in the House’s new ‘By The Pool’ resort collection”. All in a “relaxed, warm and elegant spirit”.
