[LIFESTYLE] Canopy by Hilton Paris : Eylau Paris rooftop sets up its summer home

Perched on the top floor of the Canopy by Hilton Paris Eiffel Tower, the Eylau Paris rooftop unveils its summer lineup. From exclusive high-altitude dance masterclasses and lively events to poetic food-and-wine pairings curated by Chef Rémy Ribeaucourt and the Côte des Roses rosé led by Gérard Bertrand, along with artisanal ice cream treats, this panoramic terrace stands out as the must-visit destination for connoisseurs seeking to unwind.

A panorama suspended between letting go and the Iron Lady

Stepping through the doors of the seventh floor of the Canopy by Hilton Paris Eiffel Tower is like buying a one-way ticket to a timeless escape, high above the hustle and bustle of the capital. This summer, the Eylau Paris rooftop does more than simply offer one of the most spectacular and immersive views of the Parisian rooftops and the majestic silhouette of the Eiffel Tower. It transforms into a true lifestyle sanctuary, a vibrant living space where the standards of relaxed luxury meet the light-heartedness of sunny days.

Beneath the golden light of the Parisian sky, contemporary furnishings blend with hanging greenery that instantly invites you to relax. Here, time stands still, whether you come to gently awaken during an exclusive morning or to prolong the balmy summer nights under the stars. The Eylau Paris rooftop ticks all the boxes of a secret hideaway that one would like to jealously keep to oneself, yet whose magnetic energy is just waiting to be shared.

‘Find your inner Beyoncé’ : when dance re-enchants well-being at altitude

The big news of the season is a brand-new, vibrant collaboration : the union of the creative spirit of Canopy by Hilton and the infectious energy of Dancefloor Paris. Every Saturday morning at 9.45am, the rooftop transforms into an open-air stage for free expression. The aim? To offer an exclusive series of 1½-hour dance masterclasses, designed to help everyone reconnect with their bodies, express themselves freely and, as the saying goes, “find their inner Beyoncé”.

Far removed from the austerity of traditional gyms, these sessions embody an approach that is demanding, technical and deeply accessible. Guided by instructors with a caring teaching style, participants progress to the rhythm of themed playlists and pop culture icons. Whether it’s grooving to the rhythmic world of Tate McRae, stepping into the shoes of Queen B, adopting the sunny attitude of Bad Bunny, reliving the iconic choreography of Britney Spears or paying a vibrant and festive tribute to Céline Dion, each session offers a unique atmosphere.

Limited to a capacity of 20 to 30 people to preserve the intimacy and quality of the learning experience, these workshops cost €38 and include a complimentary drink. A holistic, festive and decidedly feel-good experience, ideal for starting your day with a shot of endorphins in front of Paris’s most beautiful monument.

A calendar of experiences: vibrant events and daily rituals

Throughout the summer, Eylau Paris rooftop pulsates to the rhythm of a particularly rich and eclectic programme of events. Designed to liven up sunny late afternoons and create unique memories, the terrace comes alive with vinyl bars for music lovers, suspended silent disco sessions, an unmissable celebration for Fête de la Musique, as well as Pilates classes to stretch out under the open sky and exclusive Gérard Bertrand masterclasses.

To punctuate the week, the establishment has also devised a weekly programme of special touches and exclusive offers: Monday : Time to share. For every sharing dish ordered, a delicious dessert is on the house; Tuesday : The evenings stretch out with an extended Happy Hour from 3pm to 7pm; Wednesday : A day designed for families. With the purchase of a Pink Eiffel Tower ice cream, children receive a free gift, and parents enjoy a 10% discount; Thursday : Priority for young people with a 20% discount on a selection of drinks reserved for students; Friday : A gourmet start to the weekend with a buy-one-get-one-half-price offer on carpaccio; Saturday: After all that effort, culinary comfort. When you buy a starter, main course and dessert set menu, get 10% off the second set menu; on Sundays: Let the games begin with the Mix & Match ritual. Find the pink ticket hidden under your board and enjoy 20% off it.

As a bonus for those who enjoy a sweet treat at the end of the day, the traditional Happy Hour takes place every day from 4pm to 6pm, offering reduced prices on a selection of drinks to toast the sunset.

Fine dining and exceptional wines: Chef Rémy Ribeaucourt’s creative summer

The sensory experience naturally extends to the plate and the glass. For this summer season, the talented Chef Rémy Ribeaucourt has devised a limited-edition menu that celebrates freshness, relaxed dining and sharing. Inspired by Mediterranean flavours, the Chef offers visually striking, light and impactful dishes, perfectly suited to lunches in the sun or chic snacks. For example, guests can enjoy a daily tartare featuring fresh market ingredients, or a hearty burger made with a beef patty grilled over a charcoal fire and flambéed with cognac, topped with cheddar, red onion compote, sweet-and-sour pickles, and cocktail sauce, served with baby potatoes.

To enhance these culinary creations, Eylau Paris rooftop has teamed up this year with the famous Cote des Roses cuvée, created by one of the biggest names in the South of France, Gérard Bertrand. Instantly recognisable thanks to its unique bottle with a rose-shaped base, this exceptional rosé wine becomes the culinary thread running through the terrace. The notes of fresh red berries and the subtle floral hints of the Cote des Roses cuvée complement the seafood and vegetable pairings devised by Rémy Ribeaucourt with infinite precision. A masterful marriage of flavours that captures the very essence of a hedonistic summer.

Artisanal indulgence : the Hugues Pouget Paris ice cream trolley

Because a Parisian summer wouldn’t be quite complete without a sweet and refreshing treat, the Eylau Paris rooftop has a special surprise in store for its guests: the exclusive installation of an elegant mobile ice cream cart. It offers a selection of artisanal ice creams and sorbets by Hugues Pouget Paris (founder of the prestigious Hugo & Victor).

Renowned for his natural approach, pastry chef and ice cream maker Hugues Pouget brings all his expertise to bear on recipes crafted with rare attention to detail, free from artificial colours or flavours. Perfectly ripened fruit and a churning process of great finesse give these ice creams an exceptional aromatic intensity. Whether it’s a refreshing, full-fruit sorbet after your dance session or a more indulgent option to savour at sunset, this vintage trolley adds a touch of poetry and exquisite indulgence to the terrace’s atmosphere. The perfect final stop to complete the picture of the ideal summer at Eylau Paris rooftop.
