[Luxus Magazine] Truffle Season is Open! Where to Savor the Best Dishes in Paris?

On November 14th, the historic seasonal market of Carpentras opened its doors, officially launching truffle season. Luxus Magazine takes you on a journey through the gastronomic spots celebrating this luxury mushroom, a favorite delicacy on year-end tables.

For the past few weeks, depending on the region, truffle season has begun, much to the delight of restaurateurs and diners alike. The Carpentras market in Vaucluse (which accounts for a third of the truffles consumed in France) has welcomed industry professionals since mid-November, establishing seasonal price benchmarks for other markets across the country: €150 per kilogram as of November 21, 2025, according to the Carpentras website. On December 5th, this historic market will open to the general public. Given the season, prices are expected to rise quickly due to strong demand. According to Jean-Louis Bondil, president of the Haute-Provence Truffle Growers Association, a base price is fixed and varies depending on weight, size, and timing. “There’s a peak at Christmas, because naturally, many people want truffles for the holidays, and prices can go up to €800” the expert told La Provence.

While the year-end festivities are set to drive increased truffle sales among private buyers, restaurateurs known for showcasing this delicacy eagerly await the season—lasting until December for some varieties and until March for the Périgord black truffle and the winter truffle. It’s the perfect opportunity to sit down and rediscover this exceptional ingredient at Paris’s finest tables.
