Since the pandemic, many chefs have rethought their concept to adapt to a changing world. Ren\u00e9 Redzepi, for one, has acknowledged that Noma&#8217;s fine dining is not sustainable, <strong>both in terms of economics and profitability, and in terms of the company&#8217;s environmental impact<\/strong>. This is a problem with fine dining, with the rising costs of industry and personnel, combined with the psychologically and physiologically harsh, high-intensity working conditions. Ren\u00e9 Redzepi has been criticized for abusing the work of unpaid interns.
