The son of a farmer, the young boy grew up in a family where food was not a priority, even though his father enjoyed sweets. <strong>It was his mother, a passionate cook, who passed on her first recipes to him and sparked his interest in baking at the age of thirteen, when he made his first pies.<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p>His destiny changed almost by accident. <strong>Jean-Paul dreamed of becoming an electronics engineer<\/strong> and was preparing to apply to a specialized school in his region. <strong>But he missed the registration deadline<\/strong>. Faced with this disappointment, <strong>he chose an alternative path that would change his life: pastry making<\/strong>.<strong> In 1974, at the age of seventeen, he obtained his professional certificate in confectionery, chocolate making, and ice cream making at the Robert-Buron technical school in Laval<\/strong>. The following year, he joined<strong> the Nikko Hotel in Paris<\/strong>, first as an apprentice, then <strong>climbing the ranks to become pastry chef<\/strong>, a position he held<strong> until 1988<\/strong>.<\/p>\n<p>&nbsp;<\/p>\n<p>These years at the Nikko were decisive. Through his contact with <strong>Japanese culture<\/strong>, H\u00e9vin developed a particular <strong>sensitivity for precision, respect for the product, and the pursuit of perfection<\/strong>. This Japanese influence would have a profound impact on his<strong> philosophy of chocolate, which he readily compares to the world of wine<\/strong>, seeking to reveal the aromatic nuances of each origin of cocoa. He opened his <strong>first boutique on Avenue de la Motte-Picquet in Paris<\/strong>, laying the foundation for what would become a <strong>veritable chocolate empire<\/strong>. His concept was innovative for the time: <strong>creating spaces inspired by wine cellars<\/strong>, designed to preserve the organoleptic properties of chocolate and enhance the customer experience.<\/p>\n<p>&nbsp;<\/p>\n<p>The success was immediate. His<strong> ganaches with unique flavors<\/strong> (yuzu, passion fruit, Earl Grey), his <strong>crunchy pralines<\/strong>, his <strong>grand cru chocolate bars<\/strong>, and his<strong> refined pastries<\/strong> won over a demanding Parisian clientele. But<strong> it was in Japan<\/strong>, the land of his spiritual apprenticeship,<strong> that his expansion really took off<\/strong>. This has resulted in the creation of the H\u00e9vin-Nkolossang center of excellence to improve quality and production conditions. I believe it is essential to pass on these values to the younger generations of chocolatiers.<\/p>\n<p>&nbsp;<\/p>\n<h3><b>LUXUS PLUS: In the digital age, when chocolate can be bought online, how do your stores continue to offer a unique and indispensable experience that justifies their existence?<\/b><\/h3>\n<p>Jean-Paul H\u00e9vin: For obvious practical reasons, the two are not incompatible. I have always prioritized contact with customers in order to convey the ideal conditions for tasting.
