On the occasion of the United Nations World Environment Day, the hotel group Mandarin Oriental<\/strong> announced the use of Winnow technology<\/strong> in all its hotels by the end of 2025<\/strong>. Dedicated to food waste management and combating waste, Winnow represents a major step forward in supporting the establishment of new standards in luxury hospitality.<\/p>\n <\/p>\n Founded in 2013<\/strong>, Winnow relies on artificial intelligence designed to help chefs significantly reduce food waste. The system consists of a camera, a smart scale, and a tablet. The camera, equipped with a vision system capable of identifying more than 600 food items<\/strong>, automatically recognizes food waste as it is discarded. The system then calculates and displays the weight and cost of the discarded food. This data is then processed to produce daily, weekly, and monthly reports.<\/p>\n <\/p>\n This technology is currently used by over 2,500 sites<\/strong> worldwide and saves approximately $70 million annually<\/strong> by preventing the waste of 50 million meals<\/strong> each year.<\/p>\n <\/p>\n <\/p>\n Aware of the considerable advantage that Winnow technology represents, the Mandarin Oriental group launched pilot programs. Implemented in hotels from its portfolio located in Hong Kong, London, Miami, and Dubai,<\/strong> these trials delivered impressive results with a significant 36% reduction in food waste<\/strong> and annual net savings of $207,000<\/strong>.<\/p>\n <\/p>\n Following this clear success, Mandarin Oriental plans to extend this system to all its 40 hotels by the end of 2025. “Our commitment to sustainability goes hand in hand with our promise to offer exceptional experiences to our guests.
