Here\u2019s a selection of five galettes des rois that reveal beans as aesthetically pleasing as they are precious.<\/h4>\n<p>&nbsp;<\/p>\n<p><strong>No cake without a bean.<\/strong>\u00a0But this combination, which makes perfect sense today, is not new.\u00a0<strong>The tradition has its roots in Roman times,<\/strong>\u00a0when the god Saturn was celebrated with great festivities during the winter solstice. Patricians and slaves would feast together over a large meal and a cake, the bean of which would allow the chosen one to become king for a day and give pledges.<\/p>\n<p>Under the influence of the Church in the 14th century,\u00a0<strong>the galette began to be eaten on Epiphany<\/strong>, the religious feast linked to the visit of the three wise men to the infant Jesus at the beginning of January. The sweetness combines the classic flavours and textures of this dessert, with butter puff pastry and almond frangipane.<strong>\u00a0The beans in these galettes represent the chef\u2019s five signature pastries, including the iconic madeleine, the marbr\u00e9, the Ritz au lait and the donut.<\/strong>\u00a0The famous crown is adorned with madeleine designs.
